Subject: Pheasant Pulpatoon
I want to make the old English recipe of pulpatoon for a friend who cannot eat gluten products. The problem is that the recipe calls for bread crumbs - quite a lot of them.

I have some buck wheat flour, and some cous cous, and various other non-gluten containing meals but I don't really feel like making bread from them just in order to grind it up again. And, anyway, without the gluten I won't get a good crumb.

Does anyone have a good idea as to how I should proceed?
