Apricot and Walnut Teabread
You could replace the cinnamon with your favourite spice. Makes 10 slices.

INGREDIENTS: Self raising flour - 400 g (14 oz), Butter - 50 g (2 oz), No-soak dried apricots - 100 g (3* oz) chopped, Walnuts - 50 g (2 oz) chopped Sugar - 50 g (2 oz), Ground cinnamon - 1 tsp, Milk - 250 ml (8 fl oz), Egg - 1 lightly beaten, Walnut halves - to decorate.

COOKING: 1. Sift flour into a bowl. Add butter and rub in. Stir in apricots, walnuts, sugar and cinnamon. Add milk and egg and mix to a soft dough.
2. Turn into a 900 g (2 lb) loaf tin. Decorate with walnuts.
3. Bake at 180C / 350F / Gas 4 for 1 hour until firm. Cover top with greaseproof paper if it starts to over-brown.
