Celery Baked in Cream
Celery grows well in the rich black soil of the fen country surrounding Ely in Cambridgeshire, where more than half of the British outdoor crop comes from.

INGREDIENTS: Celery - 1 head large, Ground allspice - tsp, Garlic cloves - 2 crushed, Single cream - 300 ml, Fresh breadcrumbs - 25 g (1 oz).

COOKING: 1. Pre-heat oven to 200C / 400F / Gas 6.
2. Reserve a few celery leaves for garnish, then cut the sticks lengthways into thin strips. Cut each strip into 5 cm (2 inch) lengths and put into an ovenproof serving dish.
3. Mix the allspice, garlic and cream together and season to taste. Pour over the celery. Sprinkle with the breadcrumbs.
4. Bake for about 1hour or until the celery is tender. Serve hot garnished with the celery leaves.
