Christmas Stuffing
This will adequately stuff a large turkey up to 6.8 kg (15 lb).

INGREDIENTS: Sausagemeat - 1 kg (2* lb), Wholemeal breadcrumbs - 8 tbsp, Shallots - 6 diced, Celery - 2 sticks diced, Slivered almonds - 50 g (2 oz), Naval orange - 1 zest and juice, Dried pears - 125 g (4* oz), Fresh thyme - 2 tbsp finely chopped, Fresh parsley - 3 tbsp finely chopped, Allspice - 2 tsp.

COOKING: 1. Place all ingredients in a very large bowl.
2. Using your hands mix all the ingredients. Cover and chill until ready to use (within 36 hours), allowing at least 6-8 hours for the flavours to develop.
